
Fortune Cookies
The World Famous Asian Cookies, but 100% VEGAN
Equipment
- Flat baking tray
- Silicon mat
- Oven
Ingredients
- 1 cup plain flour
- 1/4 cup rice flour
- 2 tsp corn flour
- 1 tbsp egg replacer powder
- 1/2 tsp salt
- 1 tbsp vanilla sugar
- 1 cup light brown sugar
- 1/4 cup colza oil
- 1 cup water
Instructions
- Mix all the dry ingredients together in a bowl
- Add the colza oil and the cup of water in parts to the mixture and whisk until it's smooth
- Put a spoon full of the batter to the baking tray with the silicon mat (maximum of 3 spoons at once)
- Add the tray to the oven and bake for 10 minutes in a pre-heated oven (180°C or 356°F)
- Once out of the oven, quickly turn them around using a spatula
- Place the fortune in the middle of the cookie
- Fold it over the middle and quickly fold it over a rim of a muffin tray or a glass. Be careful: it's very hot, so use gloves!
- Add the folded cookie into the muffin tray so it will cool down in it's new shape
