
Perkedel Jagung
Crunchy VEGAN corn fritter from Indonesia, that's what Perkedel Jagung is.

Ingredients
- 3 tbsp celery leaves
- 1 onion
- 150 gr corn
- 1 tbsp egg replacer flour
- 1 tbsp sugar
- 50 gr creamed coconut
- 250 gr self raising flour
- 1 tbsp pepper
- 1 vegetable stock cube
- 200 ml water
- sunflower oil to fry
Instructions
- In a small pot put the water, creamed coconut, vegetable stock cube and the pepper
- Let the mixture melt until it's smooth and cool down for at least an hour before continuing this recipe
- Add the dry ingredients to a bowl and mix it
- Add the water mixture to the bowl and mix it until it's a thick batter
- Chop up the celery leaves and the onion add to the bowl
- Finally add the corn to the bowl and mix it well. If the batter is too thick, add some water
- Fry the pieces into a pan with hot oil or in a fryer
