Perkedel Jagung

Crunchy VEGAN corn fritter from Indonesia, that's what Perkedel Jagung is.

Equipment

  • Fryer

Ingredients
  

  • 3 tbsp celery leaves
  • 1 onion
  • 150 gr corn
  • 1 tbsp egg replacer flour
  • 1 tbsp sugar
  • 50 gr creamed coconut
  • 250 gr self raising flour
  • 1 tbsp pepper
  • 1 vegetable stock cube
  • 200 ml water
  • sunflower oil to fry

Instructions
 

  • In a small pot put the water, creamed coconut, vegetable stock cube and the pepper
  • Let the mixture melt until it's smooth and cool down for at least an hour before continuing this recipe
  • Add the dry ingredients to a bowl and mix it
  • Add the water mixture to the bowl and mix it until it's a thick batter
  • Chop up the celery leaves and the onion add to the bowl
  • Finally add the corn to the bowl and mix it well. If the batter is too thick, add some water
  • Fry the pieces into a pan with hot oil or in a fryer
