Sweet Potato Bao

Sweet Potato Bao

a Western twist on a Chinese classic

Ingredients
  

  • 1 large sweet potato
  • 2 tbsp barbecue sauce
  • 1 tbsp brown sugar
  • 2 tsp smoked paprika
  • 1 tsp cumin
  • 1 tbsp apple cider vinegar
  • salt and pepper to taste
  • 6 bao buns

Toppings

  • 2 spring onions
  • 1/4 cucumber
  • sweet-n-sour
  • hoisin sauce
  • 1 red pepper
  • coriander

Instructions
 

  • Peel the sweet potato and use a kitchen aid with blades to shred the sweet potato into julienne pieces.
  • Add some sunflower oil to a pan and heat it up.
  • Add the sweet potato and the dry herbs plus sugar and fry this for a bit.
  • Then add the barbecue sauce plus the apple cider vinegar.
  • Bake the sweet potato until it's lightly brown.
  • Assemble the bao to your liking
