
Sweet Potato Bao
a Western twist on a Chinese classic
Ingredients
- 1 large sweet potato
- 2 tbsp barbecue sauce
- 1 tbsp brown sugar
- 2 tsp smoked paprika
- 1 tsp cumin
- 1 tbsp apple cider vinegar
- salt and pepper to taste
- 6 bao buns
Toppings
- 2 spring onions
- 1/4 cucumber
- sweet-n-sour
- hoisin sauce
- 1 red pepper
- coriander
Instructions
- Peel the sweet potato and use a kitchen aid with blades to shred the sweet potato into julienne pieces.
- Add some sunflower oil to a pan and heat it up.
- Add the sweet potato and the dry herbs plus sugar and fry this for a bit.
- Then add the barbecue sauce plus the apple cider vinegar.
- Bake the sweet potato until it's lightly brown.
- Assemble the bao to your liking
