
Coconut Burfi
Happy Diwali! Make your own sweet vegan Coconut Burfi, with crunchy pistachios. It's super easy and super yummy!
Ingredients
- 1 tbsp vegan butter
- 2.5 cup coconut
- 1 cup coconut milk
- 1 cup sugar
- 0.5 tsp cardamon
- 1 tbsp unsalted pistachios
Instructions
- Add the vegan butter to a pan and let it melt.
- Add the coconut and let it bake for a little bit, don't let it burn.
- Add the coconut milk and let it bake till there's no liquid left.
- Add the sugar and bake until the mixture gets a bit sticky.
- Add the cardamon.
- Place the mixture on a rectangular plate/dish with some parchment paper
- Slightly cut the pistachios and push them in the mixture.
- Move the plate/dish into the refrigerator and let it rest for about 1-2 hours.
- Remove from the fridge and cut into squared pieces, enjoy!
