Coconut Burfi

Happy Diwali! Make your own sweet vegan Coconut Burfi, with crunchy pistachios. It's super easy and super yummy!

Ingredients
  

  • 1 tbsp vegan butter
  • 2.5 cup coconut
  • 1 cup coconut milk
  • 1 cup sugar
  • 0.5 tsp cardamon
  • 1 tbsp unsalted pistachios

Instructions
 

  • Add the vegan butter to a pan and let it melt.
  • Add the coconut and let it bake for a little bit, don't let it burn.
  • Add the coconut milk and let it bake till there's no liquid left.
  • Add the sugar and bake until the mixture gets a bit sticky.
  • Add the cardamon.
  • Place the mixture on a rectangular plate/dish with some parchment paper
  • Slightly cut the pistachios and push them in the mixture.
  • Move the plate/dish into the refrigerator and let it rest for about 1-2 hours.
  • Remove from the fridge and cut into squared pieces, enjoy!
